Summer smoothie

Such a refreshing Summer smoothie! I made this with watermelon and cucumber.

Watermelon – about 2 cups
Cucumber – about 1/3
Beet juice – 1/2 c.
Water – 1/2 c.
Protein powder – I use vanilla shakeology

Blend and enjoy. This is really so refreshing on a hot summer day and a great way to up your water intake.

Smoothie Bowls

Smoothie BowlsI love my shakeology smoothie and enjoy one every day – I just thought it would be fun to try the (almost) same thing in a bowl! So yummy & fun to eat. I blended 1 cup of berries, a scoop of vanilla Shakeology (any protein powder will work), a handful of spinach and 1/2 cup of water. I think I actually added a little more water, which was too much – it got a little soupy. So, stick to a half cup. I would also suggest throwing in some oats to the blender to thicken it up a little. I’m going to be trying different versions, so stay tuned for new recipes!

Quick recipe for Smoothie Bowl:

  • 1 c berries – I used strawberries because they’re in season, but any mixture of berries will work
  • scoop of protein powder
  • 1/2 c of water
  • add 3 Tbsp of oats or granola
  • a handful of spinach or kale
  • Blend. Voila. Enjoy!

Summertime outdoor fitness fun

Outdoor fitness is important to me. I try to get outside as much as I can when the weather’s nice. While it’s always nice to get outside on a daily basis by gardening or walking the dogs, sometimes it’s nice to go on a little road trip adventure. South Dakota has put together a fun fitness challenge. It’s called the GFP Fitness Passport Challenge and it encourages participants to visit the beautiful and varied parks across the state, collect stamps for visiting and redeem the stamps for prizes. Its an effort to encourage healthy activities like hiking, rock climbing, snowshoeing, birding, swimming, cross-country skiing, hunting or fishing. With beautiful parks all across the state, I have no excuse for not putting my hard-earned Insanity Max:30 heart health to the test! See if your state offers a similar program.
